How to select, store and serve what’s fresh for spring

By Holly Brown

As Spring peaks, produce choices abound! Fruits and veggies can (and should) be incorporated in everything from appetizers, to pasta dishes, seafood preparations, tasty twists on salads, and desserts.

While many fruits and vegetables are available year round, fresh in season means you can buy locally, and enjoy ingredients at their peak of flavor. Here’s what’s fresh in season this month, and what you can do with pretty produce to brighten and lighten your menus!

Artichokes: In peak season Mar – May
Look for firm, heavy, artichokes that are green with leaves tightly closed. Avoid chokes that have browned or split leaves. Fresh artichokes can be refrigerated in a plastic bag for up to five days. When ready to cook, cut stems completely off, so artichoke can sit up without tilting over. Cut prickly tips off with scissors.

Arugula: In peak season April – June

Highline to fund full-day kindergarten at all schools

Superintendent will use district dollars if state fails to fund full-day K for all

Press release:

Highline Public Schools will fund tuition-free full-day kindergarten at all schools starting this fall, regardless of the amount the state Legislature allocates to full-day kindergarten.

State lawmakers are currently debating over budget plans with varying levels of kindergarten funding. Each of the three plans would fund full-day kindergarten at some, but not all, schools in Highline.

“We cannot wait for the legislature to act. Full-day kindergarten is the right thing to do for all our children and families now,” said Superintendent Susan Enfield. “This is a game-changer for our students.”

Full-day kindergarten is a key strategy for meeting the district goal of 95 percent of next fall’s kindergartners performing at or above grade level in all core subjects by the end of Grade 3.

Multiple studies show that children who participate in full-day kindergarten make significant gains in reading and math compared with students in half-day programs. Research also shows that mastering reading and math skills by third grade is critical for success throughout middle and high school.

SLIDESHOW: Tyee Boys Soccer Team is Rewriting History with Playoff Wins!

The Tyee boys soccer team is on an amazing ride and making school history in a sporting way.

Tyee (14-4-1) is in the playoffs for the first time since 1982. For you who are slow at math (like me) that is 31 years ago! Remember 1982, well some of us do. That was the year the Commodore 64 computer and the first CD players were introduced by Sony - my how technology has changed!

Tyee has already made school history, winning its first playoff game by a score of 4-1 over Capitol of Olympia, on May 15th at Highline Memorial Stadium. That was their first-round match in the Class 2A Playoffs. So from now on, every win continues to rewrite their history book as they move towards their goal to be State Champions.

Ballard High lacrosse team marches into quarterfinals

From Ballard High School

Last night, our Ballard Beavers defeated Stadium 10-5 within the hallowed confines of Tacoma’s Stadium Bowl. We meet Nathan Hale Wednesday May 29th at 5:45 PM for the right to face the winner of Richland at Garfield for the Division II Lacrosse State Championship.

The Stadium Bowl, a concrete amphitheater constructed in 1913 out of a gulch, has now hosted Presidents, victorious generals and a dominating performance by the Ballard Boys Lacrosse team.

The game was 2-1 starting the second period when the Stadium goalie attempted to clear from the crease. With his four seconds to leave the crease expiring and Ballard Attackman Josh Schwartzenberger riding, he passed instead of dodging into a run. His pass travelled three feet into Josh’s stick for a Stadium shocking goal. Moments later, middie Thomas Christensen’s speed down the topside alley left him open for a quick stick from “X” goal. By halftime Ballard had pushed the lead to 5-2.

SUV flips and burns on Roxbury sending driver to the hospital; Eyewitness account

A male driver of an SUV was sent to the hospital on Wednesday night after rolling his vehicle near the intersection of 35th and Roxbury. According to former West Seattle restaurateur Deborah Breuhler who literally saw the accident in her rear view mirror, " He was coming up Roxbury going westbound. I was watching him in my rear view mirror and he was going very fast. I'm thinking ok he's going to hit me, but then he starts to go into the oncoming traffic.

I thought, 'Oh he's going to pass me, we're all good' and then he turns really quick into this parking garage and flips car up the hill like three times. So then he climbs out, and the car is on fire, this woman is screaming at the car. Then he's hugging this elderly gentleman who turns out to be his grandfather and I don't know where he came from. But he's laughing and the music is blaring super loud and the car is smoking. Then the fire department shows up and strap him to a board and they took him away. I guess he was drunk out of his mind. But nobody got hurt and he didn't damage any property other than his own. That was the craziest thing I've ever seen in my rearview mirror."

Pet of the Week: Dixie is a 'lot of angel and little bit of devil'

Gary and Hillary Macon got their dog Dixie from the Seattle Humane Society only recently. It was the day before Easter, "and we brought her home and she became sick on Easter and we had to bring her back to the Humane Society because she had Parvo (virus) and almost didn't make it. But they used a scope, did a surgery on her intestine and that saved her. She had lost quite a bit of weight but then she started eating and drinking and now she's back where she was."

"We re-adopted her after the hospital stay," said Gary.

Dixie is a minature Pinscher, "But there's some debate on exactly what she is. She's got a bit of terrier mix too."

She eats puppy food from Mud Bay but Hilliary said, "one of the things about her is that she doesn't drink water. But on one hot day she had a couple of licks." For treats she gets 'Lamb lung' treats.

The couple plan to take her to get trained but she had to wait until she could be around other dogs. While she is now immune to Parvo, she still had the potential to pass it on, but by now she is fine.
