Kitchen Talk: Eggsactly what you need

The best thing in the world is the egg. They are cheap, nutritious and you can cook them many different ways. Kathy has the nutrition in her blog The Unscrambling Of Eggs and I get to tell you all the ways to cook an egg. The original chef hat has 100 pleats in the top of it and this signifies how many different ways you can cook an egg. Egg is amazing because it can be manipulated in so many ways and is protein packing giant. Egg is the base for many loved items like whipped egg whites for meringues, emulsified egg yolks with oil for mayonnaise or the combination of whipped egg whites folded into warmed egg yolks to create a magical souffle. I love eggs and know that no kitchen can survive without this eggsistential item.

This month I am going to give you our amazing crab stuffed deviled eggs. These little gems are being served Easter weekend at all three Salty's locations.

Crab Deviled Eggs

Serves 6-8

1 dozen eggs, hard-boiled and peeled

We were awed by the notion that one simple egg was all that was needed to produce an adorable little baby chick, it was a miracle in a shell, right? Ah but then came the age of enlightenment and scientists taught us about the dangers of cholesterol, and sadly eggs were summarily banned from breakfast. The epiphany was that eggs contained cholesterol and cholesterol created plaque in arteries and plaque in arteries gave us heart disease and heart disease was a twentieth century disaster. So all foods that contained cholesterol were placed on the no fly list and our eating habits shifted. We learned to live with cereal, egg whites, Egg Beaters and margarine for breakfast and our mornings suffered.

Happenings in the Heart of West Seattle

Spring Clean is your chance to make the Junction even better

Believe it or not, spring is here! And with it comes Spring Clean, a community cleanup program supported by Seattle Public Utilities.

Spring Clean, now in its 31st year, runs from April 1 through May 31. During this time, Seattle residents—neighbors, volunteer groups, community organizations—come together to clean up Seattle’s neighborhoods. Activities include picking up litter, stenciling storm drains to prevent water pollution, painting out graffiti, removing invasive plants, and more. Seattle Public Utilities and the Junction Association supports volunteers by providing free tools like garbage bags, gloves, garbage grabbers, safety vests, and paint supplies.

We’ll have coffee, breakfast, tools, and a nifty limited-edition volunteer hat

Chief Sealth pounds West Seattle in playoff tuneup

What a way to tune up for the playoffs.

Chief Sealth did it by breaking out the bats and beating close rival West Seattle for the first time in four seasons Friday, 12-3.

The Seahawks outhit the Wildcats, 14-7, in the Metro League baseball regular season finale for both teams.
"We didn't know what to expect," said Chief Sealth head coach Ernest Policarpio. "West Seattle and Chief Sealth is always a good game. We just hit the ball better. We won because we outhit them."

The Seahawks finished the regular season with a 12-9 record and now open the Metro League playoffs at 7 p.m. Monday against Ballard at Mel Olson Stadium at Steve Cox Memorial Park in White Center.

West Seattle wound up at 4-14 and out of the playoffs, which has been a rarity under head coach Velko Vitalich.
Vitalich finds himself only four coaching wins shy of 400 for his career, all of which has been spent at West Seattle.

"It's tough to watch the playoffs when you're not in them," Vitalich told Policarpio toward the end of Friday's action at Hiawatha playfield next to West Seattle High School.

South Seattle College’s Aviation Maintenance Technology Program partners with Delta Air Lines

After an extensive evaluation process, Delta Air Lines has selected South Seattle College as an approved partner college in training future aviation maintenance technicians for careers with the global aviation company.

South’s Federal Aviation Administration (FAA) certified Aviation Maintenance Technology (AMT) program has been training technicians since the 1970s. Students learn to keep aircrafts in safe flying condition by servicing, repairing and overhauling aircraft and aircraft components based on detailed FAA regulations.

Delta foresees high demand for well-trained AMT professionals in the airline industry, and selected South along with 38 other AMT programs across the nation as a training partner. South and Delta have already been working closely since 2014, when a paid internship program launched that has become a national model Delta in now replicating in other cities.

Herbold: West Seattle Bridge studies produce recommendations

In her newsletter to constituents District 1 City Councilmember Lisa Herbold provides information on a series of studies regarding the West Seattle Bridg. Hebold writes:

"The Seattle City Council has commissioned six studies of the West Seattle Bridge corridor, called for in the West Seattle Bridge/Duwamish Waterway Corridor Whitepaper prepared for former Councilmember Tom Rasmussen in 2015, to improve safety, incident management, and traffic flow on the West Seattle Bridge and the lower bridge.

This study covers the area from the West Seattle Bridge and Spokane Street Viaduct to I-5 (including the lower roadways). Four studies were funded in 2015, sponsored by Rasmussen. I secured funding for the remaining two in 2016.

These four studies have recommendations to:

  • manage the daily unpredictable disruptions on the lower roadway
  • reduce crashes on the upper bridge
  • reduce incident clearance times to restore normal traffic.

My name is Jennifer Burbridge, and I recently accepted a position as the Crime Prevention Coordinator at the Seattle Police Department’s SW Precinct. This is the first of my monthly articles that will be distributed throughout the SW Precinct and the City of Seattle. In this first article, I would like to introduce myself, discuss the importance of calling 911 and reporting crime and explain my role in the SW Precinct area.

Work complete on Murray Basin CSO; Fences come down next week, celebration set for June 10

information from King County

With restoration work complete, King County’s contractor will remove fencing around the Murray Basin CSO facility site during the first week of May. The public staircase will be open once the fencing is removed. The fencing around Lowman Beach Park will remain in place through the spring until the grass is established.

King County will raise the height of some sections of railing on the facility roof to enhance site security and safety. You may see temporary barriers in place until this update is complete. The staircase will remain open to the public during this work.
