Todd Carden has been eying Burien for years.
Now, the co-owner of Elliot Bay Brewery and Pub in West Seattle is expanding his business to the south.
A new, larger brew house and restaurant will open in early 2007 at 255 S.W.152nd Street and will offer an expanded selection of the award-winning beer the restaurant is known for.
"We've been keeping our eye on Burien for a while," Carden said. "The city is positioning itself to attract families with all the work they've been doing."
When Carden opened the brewery and pub in West Seattle, he set out with a goal to offer the most family friendly and community oriented restaurant possible.
Now that the goal has been reached in West Seattle, he hopes to do the same in Burien.
The brewery will continue to offer healthy organic food from beer to the burgers at a reasonable price.
"We want parents to know that they can feed their kids at our establishment for the same price as if they were to eat at McDonalds," said Carden.
It's not only the cost of food that Carden wants to emphasize but also the quality.
"Parents like our kids menu because it's healthy and the kids like it," said Carden. "We take kids health very seriously."
He has hired the executive chef of McCormick's and the Fox Sports Grill to oversee both kitchens.
A larger incorporation of beer into the food will be also added to the menu.
To make room for the large brewing tanks at the new location, 1,000 square feet of floor space was removed directly in the middle of the restaurant, allowing the customers to watch the beer-making process from their dining tables.
Though the new brewery will be full of "big" things, one thing will remain small: the freezer.
Carden brags about its small size due to so much fresh food they offer. With so much of the ingredients coming in on a daily basis, he says there's no need to freeze anything.
The larger brewery will finally give the company a chance to experiment with new types of beer they have always wanted but never could due to lack of space.
Carden says that many of his current customers are from Burien and with the recent transformation occurring in Burien, it was a location that couldn't be passed up.
West Seattle went through similar changes 10 years ago when The Elliot Bay Brewery originally opened.
"We are trying to make an establishment where people can identify with their community, it doesn't matter if you are 80 years old or a kid, this is a place where everyone is welcome and can have a good time," said Carden.
