Owners Jessamy Whitsitt and Renee Steen are opening their shop, Pie, Wednesday morning.
A “coming soon” sign on the window of the little blue-framed shop on 3515 Fremont Ave N has been announcing Pie’s opening for months. Now, the moment is finally here - Pie will start serving their sweet and savory handcrafted hand-held pies Wednesday morning at 7 a.m.
“It’s been a working progress,” said co-owner Renee Steen. Together with Jessamy Whitsitt, the two have been laboring away since September to transform what was half of Frame-Up Studios into an inviting Pie shop and soon-to-be late night grab-and-go spot.
As the name suggest, Steen and Whitsitt serve pie - all kinds of pie.
“In addition to your sweet pies, we have savory pies - all sorts of meat pies, vegetable pies, ground turkey pie, a smoked salmon with goat cheese pie, and sausages in pie crust,” Whitsitt said, adding that she’s currently working on a root vegetable pie.
“We’re not just a place where you get your apple pie, although I make a killer apple pie.”
Whitsitt said she has been baking her whole life.
“My mom couldn’t get me out out of the kitchen,” she said. “And Renee grew up in an European household so there was always good food and things like streusel around.”
Whitsitt didn't seem to worried about opening her small business in the current economic climate.
“The way the economy is going to rebuild is through small businesses,” she said.
“And all our pies are under $5. You can get a full lunch of a drink, soup or salad and a pie for less than $10. That way it’s affordable very everyone.”
In addition to being affordable, Steen and Whitsitt are all about keeping it local.
The walls in the shop are decorated with painting by local painter Debbie Faas, they will be serving coffee by Victrola and they carry ice cream by Bluebird.
Wednesday will be their soft opening as the two continue to put finishing touches on the interior and exterior of the shop but neighbors can expects delicious pie smells wafting through the air starting in the early morning.
“We’re just excited to open,” said Whitsitt.
Pie will be serving breakfast and lunch and for those who are looking for a good breakfast, Whitsitt recommends trying the sausage and potato breakfast pie with an egg baked on top.
All pies are freshly baked and served between 7 a.m. and 3 p.m. Monday through Friday, and from 8 a.m. until 3 p.m. on Saturday.
The shop is of the grab-and-go type with limited seating inside as well as outside in the spring and summer.
They will also have a late night window, open from 8:30 p.m. until 2:30 a.m. on Thursdays, Fridays, and Saturdays.
Pie is currently looking for employees so that they can extend their hours.
