Revelry Room and Jet City Labs gearing up for March 23 opening in West Seattle Junction
Experiential creative space and bar hope to become a unique offering to the community
Tony Larson, bartender partner with Jet City Labs and the Revelry Room has built the bar to his exacting specfications maximizing quality and speed of service.
They are located in the former Lika Love location in at 4547 California Ave SW.
Jet City Labs has been located across the street and upstairs but is now moved to the new location.
Partners Derek Moon and Tony Larson say the business is unique in that the 35 to 40 person space out front is "highly adaptable", meaning everything from yoga classes, to art showings, poetry slams, office parties, pop ups and more are possible.
"If you have an idea for a pop up we will absolutely work with you to make it happen." Larson said.
There will be a couple of soft opens the previous week.
In the Revelry Room they will start with eight cocktails, eight spirit and beer pairings from local distilleries and local breweries.
"One of the cocktails will be rum based, with orgeat syrup, lime and ube, a filipino sweet potato extract. It's dark purple. I want all the cocktails to be really vibrant, 'Instagram worthy', " Larson explained.
One of the drinks certain to be on the menu is the "Buckhead" made from bourbon, strawberry infused cynar, lemon juice, aromatic bitters and rhubarb bitters. "My grandmother used to make me strawberry rhubarp pie when we would go to visit her, so this is just a little 'Love you Grandma', Larson said, "There's a little bit of me in all these drinks." This will be at at the high end of the list at $13. Most will be less. The pricing in fact is on a sliding scale making it accessible to everyone.
"We want to make sure people in West Seattle know you don't have to dress up come in here. You roll in with your friends on a Tuesday, have your beer. You are not going to be intimidated by anything. This is comfy, quiet casual lounge."

The rear entrance, which was previously non-descript, wil have a large striped, multi-colored "R" over the door. "
They will have four meals available and they will change seasonally, but up first are locally made tamales. "We want to feature a lot of different types of food."
