Drew Locke and Kevin Fawcett are hoping for an October 1 opening for the West Seattle Brewing Company just finishing up construction at 4415 Fauntleroy Way SW, in the former Tervo's Market location. They have plans to add more outdoor capacity too, and will serve 18 different small batch brews on a regular basis.
Building a business from the ground up isn't easy and the West Seattle Brewing company is no exception. Drew Locke and Kevin Fawcett have been working for many months on what is obviously a high visibility location, the former Tervo's Market spot at the point of the triangle at 4415 Fauntleroy Way SW.
It has taken time but the two owners say it will all be worth it and they are aiming at an Oct. 1 opening date.
With seating for at least 29 people (and room for a few more standing) the location has been renovated and will have 18 brews on tap at a time.
Fawcett explained, "We can make more than 40 types but only 18 at at time will be available. We're a nano-brewery," referring to its small size," we're a barrel and a half at at time. Three kegs to a batch." That will change in their first year if things go well Fawcett said, meaning a bit more capacity for larger batches will be brought online.
They also plan to keep building the actual human capacity too. Locke said, "By next summer with outdoor seating, wrapped around to Genesee to our parking lot which is too deep we can double our capacity." That would mean they'd have the biggest outdoor seating in West Seattle.
No food will be available when they first open but eventually they will bring in some kind though the plans are not clear as yet.
They plan on being able to host parties and events but private bookings are something they still need to investigate the pair acknowledged.
They plan on manning the taps themselves to start with. "I've been a brewer for 22 years," said Fawcett," but never commercially like this, always a home brewer and I know a lot of people in the industry. I stick with the brewing end of it. Drew is very, very proficient at the bar end of it and he's got the brains for the business side of it too. Between the two of us we make an odd pair that fit perfectly."
"It's a great location," Fawcett continued," and we want it to become a neighborhood place where people come to hang out and make it the neighborhood clubhouse."
Their slogan? "The beer must flow."
