The inside (and outside) of the new Pecos Pit Bar-B-Que at the corner of 35th SW and Fauntleroy Way SW will be very busy once they open officially June 22. Ahead of that.. the soft openings (with reservations) and the Grand Opening on June 21 will celebrate the new business.
The new Pecos Pit Bar-B-Que is set for a Grand Opening celebration on June 21 at 4pm. June 22 will mark the first full day in business.
Located at the corner of 35th SW and Fauntleroy Way SW the new restaurant is the most recent venture by Gerry Kingen, co-owner of Salty's Seafood Grills. Kingen who built the Red Robin Burger chain into a regional force before selling to investors sees the new restaurant as a community asset and a high point in his career. "It's the last act, the last restaurant venture I'm going to be involved with," Kingen said, "We already have interest from Canada (A franchise in Canada has already been sold) .so it's not just limited to West Seattle. It's playful and based on the power of nice. I'm very excited about it and where it can go."
The Springbrook Business Park at 7691 S 180th Street is the next location to be built where the "Central Pit" will be located. For the time being the meat prep is being done in a roaster-smoker just adjacent to Salty's on Alki. "All the meat at Pecos is cooked at less than 245 degrees which results in a healthier meat output. High temperature cooking of meat causes carcinogens to be released, common in many hamburger restaurants. That's not the case with Pecos."
The restaurant's regular hours will be 11-9pm Monday-Sunday.
Soft opening will have only a few times for free food
The management team posted this on Facebook noting that while they will offer free samples, they are by reservation only in advance of the actual opening.
Pecos Pit West Seattle will be conducting a soft opening from June 15th through June 18th (Saturday). A soft opening is an opportunity for our Team to prepare and practice for our grand opening in front of a “friendly audience”. It helps us work out any last minute “kinks” before we go “live”.
