Low-salt pizza from the pantry

By Katy Wilkens,

Registered Dietitian

Pizza is high on the list of the top 10 saltiest foods Americans eat. As with all things salty, the best approach is to make your own.

You may be thinking that the big reason you order pizza is because you are short on time to cook. But homemade doesn’t have to mean slow.

You can make this recipe in less than 30 minutes and have it on the table before a pizza delivery could get to your door. Your local pizza parlor isn’t doing anything you wouldn’t. Pizza takes the same amount of time whether someone else makes it or you do.

Homemade pizza could become a family favorite, so be sure you’re stocked up with low-salt toppings. You’ll save money and know that you’re being kind to your heart and kidneys by maximizing flavor and minimizing salt.

Volunteer to become a Seattle Urban Nature Guide

Observing and classifying plants and animals, peeking into their cycles of life, leading strolls through nature, exploring natural history with others -- sound like a walk in the park? Then, becoming a Volunteer in the Seattle Urban Nature Guide program might be just for you.

Seattle Parks and Recreation (SPR) is currently recruiting for the Seattle Urban Nature Guide (SUN Guide) program. The on-line application deadline is Thursday, March 21.

SUN Guides train with Seattle Parks and Recreation Staff to learn about our flora and fauna, acquiring knowledge and techniques to engage others in the love of nature. These volunteers are then charged with leading hands-on activities for children and adults in Parks and other green spaces around Seattle.

“We hope to attract new folks to realizing the magic of volunteering on behalf of Nature,” Seattle Urban Nature Guide Elaine Chuang said.

An eye for guiding

By Sarah Mackay

Samantha Schrantz might just have the best job ever.

It’s almost too good to be true as if a children’s fairy tale and yet, it’s real. Everyday Samantha wakes up and takes Gino to school and that’s just the beginning of their adventure. He sleeps under her desk until the bell rings and they walk to the next class. When students ask if they can pet Gino, Samantha gently asks them to refrain from distracting him while he works.

These piggies went to market

By Jean Godden

At the Pike Place Public Market, every year is the year of the pigs --- Rachel and Billie, the Market's bronze piggy banks. But this year, 2019, places extra emphasis on the Market's mascots. That's because February 5 ushered in the Lunar Year of the Pig, twelfth of the 12-year cycle of animals that make up the Chinese calendar.

Chinese horoscopes say the Year of the Pig brings good luck and longevity. It's a year to make money and invest, a year filled with joy, love and happiness. Those born in a Pig Year -- years like 1947, 1959, 1971, 1983 and so on -- are especially fortunate.

The Pike Place Market Foundation already is capitalizing on this symbolism. An actor dressed in a pink pig costume has been visiting Market venues to raise money for Pike Place Market's Community Safety Net, a fund that helps Market workers and residents who are facing financial hardship.

When a robot answered the phone

By Ken Robinson

Managing Editor

Karl Krull was mad. He wanted to comment on the light rail project we ran a story on in our Feb. 22 issue. When he called the listed number at Sound Transit for public comment,  a robot answered and said he could bypass the announcement in four different languages by pressing zero.

That made him mad and he called the Westside Seattle at 425-238-4616 to complain. All he wanted to say was he hoped the materials used in the light rail project were made in the USA.

At the sound of that second beep, he got mad and hung up. He wanted to talk to a human and wanted know why a human was not there to receive his complaint.
