Fermenting 101 will teach you how to make delicious, healthy, probiotic fermented vegetables in a two hour hands on workshop, and you get to take your own self made sauerkraut home.
Coming up on January 10 (Sunday) is something that's both very healthy and unusual. It's a class called Fermenting 101 put on by brand new Seattle company called the Field Trip Society. The class seeks to answer the question of 'why are fermented foods so good for us?'
Fermented foods are those put through a process of lactofermentation in which natural bacteria feed on the sugar and starch in the food creating lactic acid. This process preserves the food, and creates beneficial enzymes, b-vitamins, Omega-3 fatty acids, and various strains of probiotics. Studies have shown that probiotics have beneficial effects on digestion.
During the two hour, hands-on workshop attendees will learn about the history of fermentation, its health benefits, and how to make their own sauerkraut.
All supplies are included. Additionally, In Ferment ceramic fermenting crocks will be available for sale at a discounted price to students.
The instructor for the class is Hadar Irons an architect, fermenting enthusiast, potter, and owner of In Ferment. She believes that there is a symbiotic relationship between food and art that can easily be forgotten in our 'instant gratification' society. Along with advocating and teaching about the health benefits of fermentation, she loves to incorporate art into the kitchen space.
Company owner Cambria Cox said, "I launched the business in September of this year with the mission of offering opportunities for curious grown-ups to broaden their knowledge, dabble in something new, and become inspired to learn even more. Our motto, "semper quaerens", translates as "always curious, always seeking". Other classes offered through Field Trip Society include learning how to catch a trout, making pasta from scratch, and the art of indigo dyeing.
The company partners with experts who are passionate about what they do and are eager to share it with others. Classes take place in restaurants, homes, shops, parks or "anywhere else our curiosity takes us," said Cox.
